Burritos Rancheros | From Coyote Country Seasonings
1 pkg. med. size flour tortillas
1 lb. ground beef or shredded beef
1 lb. can refried beans
1 lb. grated cheddar cheese
1 sm. can green chile salsa
1 sm. onion, diced
1 package Coyote Country Seasonings Enchilada soup, prepared with 3 cups of water.
8 oz. sour cream
1 package Coyote Country green chile dip mix or Coyote Country jalapeno cilantro dip mix
Mix sour cream and green chile dip mix together and put in refrigerator for later. Brown meat; mix together with beans, 3/4 of cheese, salsa, and onion. Roll into the tortillas. Arrange in 9 x 13 pan. Pour enchilada sauce over all. Bake at 325 degrees for 25 minutes. Spread sour cream mixture on top and sprinkle with remaining cheese. Return to oven for 10 minutes. Great with Spanish rice and a tossed green salad.
